Ingredients
Scale
Vegetables & Herbs
- 4 cups fresh corn kernels (about 6-8 ears of corn)
- 1 medium onion, finely chopped
- 1/4 cup bell pepper, finely diced (any color)
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped (for garnish)
Meat & Dairy
- 4 slices of bacon, diced
Seasonings
- 1 teaspoon salt (to taste)
- 1/2 teaspoon black pepper (to taste)
Instructions
- Prepare Corn Kernels: Begin by shucking the corn ears, removing husks and silks. Carefully cut the kernels off the cob using a sharp knife and set aside.
- Cook Bacon: In a large skillet over medium heat, add the diced bacon. Cook for about 5-7 minutes until the bacon becomes crispy and releases its fat.
- Drain Bacon: Using a slotted spoon, remove the crispy bacon from the skillet and place it on a paper towel-lined plate to drain excess grease. Retain the rendered fat in the skillet.
- Sauté Onion and Bell Pepper: Add the chopped onion and bell pepper to the bacon fat in the skillet. Sauté for 3-4 minutes until the onions turn translucent and the peppers soften.
- Add Garlic: Stir in the minced garlic and continue sautéing for an additional 1-2 minutes, stirring frequently to prevent burning.
- Cook Corn Kernels: Add the fresh corn kernels to the skillet and stir well to combine. Cook together for 8-10 minutes, stirring occasionally to ensure even cooking and prevent sticking.
- Season: Season the mixture with salt and black pepper, adjusting the taste as necessary.
- Combine with Bacon: Once the corn is tender and lightly caramelized, remove the skillet from heat and fold in the crispy bacon pieces.
- Garnish and Serve: Transfer the fried corn with bacon to a serving dish and garnish with freshly chopped parsley before serving.
Notes
- Use fresh corn for the best sweetness and texture; canned corn can be substituted but may alter flavor.
- Adjust salt and pepper according to preference, especially considering the saltiness of bacon.
- For a spicier version, add a pinch of crushed red pepper flakes while sautéing the garlic.
- This dish pairs well with grilled meats, sandwiches, or as a hearty addition to a vegetarian meal if bacon is omitted.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated gently on the stove.
