Instructions
- Caramelize the Onions: In a large pot, melt the unsalted butter over medium heat. Add the thinly sliced onions and cook, stirring occasionally, until they are soft and golden brown, a process that takes about 25-30 minutes.
- Add Broth and Seasonings: Once the onions are caramelized, add the beef or vegetable broth, Worcestershire sauce, balsamic vinegar, bay leaves, dried thyme, and season with salt and pepper. Stir well to combine all ingredients.
- Simmer the Soup: Bring the mixture to a boil, then reduce the heat to low. Allow the soup to simmer gently for 15-20 minutes so the flavors meld together fully.
- Prepare for Serving: Remove the bay leaves from the soup. Ladle the hot soup into individual oven-safe bowls, filling each about three-quarters full.
- Add Bread Topping: Place a layer of toasted croutons or baguette slices on top of the soup in each bowl.
- Add Cheese: Layer 2-3 slices of provolone cheese over the bread to completely cover the surface.
- Melt the Cheese: Transfer the bowls to a broiler and cook for 2-3 minutes or until the cheese is melted, bubbly, and slightly browned.
