- Prepare the puff pastry: Open up the thawed puff pastry sheets and lay one flat. Spread 1/4 cup of fig preserves evenly over the surface, leaving a small border around the edges. Crumble and sprinkle half of the goat cheese over the fig preserves. Repeat the same process on the second puff pastry sheet with the remaining preserves and goat cheese.
- Roll the pinwheels: Carefully roll each puff pastry sheet tightly into a log shape, ensuring the rolls are compact. Place each log seam side down on a plate or board and refrigerate for 20 minutes to firm up.
- Preheat the oven: Set your oven temperature to 400º F (200º C). Line two baking sheets with parchment paper to prevent sticking.
- Slice the pinwheels: Using a serrated knife, cut each chilled puff pastry log into 12 even slices, creating 24 pinwheels total. Arrange 12 pinwheels on each prepared baking sheet, spacing them about an inch apart to allow for expansion while baking.
- Bake: Place the baking sheets in the preheated oven and bake the pinwheels for 15 minutes or until they turn golden brown and puffed up. Remove them from the oven and serve immediately, or cool and freeze for later use.
