Cheese Spread
- 6 oz package “The Laughing Cow” Original Creamy Swiss flavor cheeses (8 wedges)
- 2 to 3 garlic cloves (or to taste)
- 2 Tbsp real mayonnaise
Baguette Base
- 1 long baguette (sliced about 1/4″ to 1/3″ thick)
- 2 Tbsp unsalted butter (melted)
Topping
- 2-3 hard-boiled eggs
- 3-4 Tbsp fresh chives (chopped)
- Optional: fresh parsley for garnish
Instructions
- Prepare the Cheese Spread: In a small bowl, combine the 8 wedges of The Laughing Cow creamy Swiss cheese with 2 to 3 minced garlic cloves and 2 tablespoons of real mayonnaise. Mix thoroughly until smooth and well blended.
- Toast the Baguette Slices: Preheat the oven to 350°F (175°C). Slice the baguette into 1/4 to 1/3 inch thick slices. Brush each slice with melted unsalted butter. Arrange the slices on a baking sheet and toast them in the oven for about 5 minutes or until they are lightly golden and crisp.
- Prepare Hard-Boiled Eggs: Peel the hard-boiled eggs and chop them finely or mash them with a fork to create a crumbly texture suitable for topping.
- Assemble the Canapés: Spread a generous layer of the prepared cheese mixture onto each toasted baguette slice. Then, top with the chopped hard-boiled eggs. Finally, sprinkle fresh chopped chives evenly over each canapé. Garnish with parsley if desired.
- Serve: Arrange the canapés on a platter and serve immediately for best taste and texture.
