  • 1 tablespoon ground cumin
  • ¾ teaspoon kosher salt
  • 15 ounces salsa (about 1 jar)
  • 15 ounces black beans, drained and rinsed (1 can)

Cheeses and Garnish

  • 1 cup freshly shredded cheddar cheese, divided
  • 1 cup freshly shredded Monterey jack cheese, divided
  • 2 tablespoons chopped fresh cilantro (optional)


Instructions

  1. Cook the beef and onions: In a skillet over medium-high heat, add the ground beef and chopped yellow onion. Use a spoon to break apart the meat as it cooks. Continue until the beef is fully cooked through and no longer pink.
  2. Add bell pepper and spices: Stir in the chopped red bell pepper; cook for 1 to 2 minutes until it begins to soften. Then add minced garlic, taco seasoning, ground cumin, and kosher salt. Cook for approximately 1 minute until the spices are fragrant.
  3. Combine salsa, beans, and cheese: Pour in the salsa and black beans, stirring to combine. Add half of the shredded cheddar and Monterey jack cheese into the mixture. Sprinkle the remaining cheese on top of the skillet contents. Reduce heat to medium, cover the skillet, and cook for about 2 minutes until the cheese is melted and bubbly.
  4. Garnish and serve: Remove the skillet from heat. Garnish with chopped fresh cilantro and sliced jalapeno pepper if desired. Serve immediately for a warm and cheesy Tex-Mex meal.
