- 1 teaspoon minced garlic

- 3 eggs (lightly beaten)
- 3 and 1/2 cups rice (cooked)

- ¼ cup soy sauce (or more to taste)

- Heat Oils and Cook Shrimp: In a large skillet or wok, heat olive oil and sesame oil over medium-high heat. When the oils are hot, add the shrimp and cook until almost done, about 30-60 seconds per side, ensuring they turn pink and are nearly cooked through.
- Add Vegetables: Add the frozen peas and carrots to the skillet with the shrimp and cook until they begin to soften, about 2 minutes. Stir in the green onions and minced garlic and sauté for about 1 minute to release their flavors.
- Cook Eggs: Push the shrimp and vegetable mixture to one side of the skillet. Pour the lightly beaten eggs into the empty side. Allow them to set briefly, then scramble them gently until cooked, and mix the eggs back in with the shrimp and vegetables.
