For the green tomatoes:

- 1 cup buttermilk
For the coating:
- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
For the egg wash:
- 2 large eggs
- 2 tablespoons olive oil (for drizzling or spraying)
Instructions
- Preheat the oven: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it.
- Soak the tomatoes: Pour the buttermilk into a shallow bowl and soak the tomato slices for 10 minutes.
- Prepare the coating: In another bowl, mix the flour, cornmeal, salt, pepper, garlic powder, and paprika.
- Beat the eggs: In a third bowl, beat the eggs.
- Coat the tomatoes: Dip each tomato slice first in the flour mixture, then in the eggs, and again in the flour mixture, pressing to coat well.
- Bake: Arrange the coated slices on the prepared baking sheet. Lightly drizzle or spray the tops with olive oil. Bake for 15-20 minutes, flipping halfway through, until golden brown and crispy. Serve hot.
Notes
- For extra crispiness, use a wire rack on the baking sheet.
- You can substitute buttermilk with a mixture of milk and lemon juice or vinegar.
