  • 1 cup buttermilk

For the coating:

  • 1 cup yellow cornmeal
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika

For the egg wash:

  • 2 large eggs
  • 2 tablespoons olive oil (for drizzling or spraying)

Instructions

  1. Preheat the oven: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it.
  2. Soak the tomatoes: Pour the buttermilk into a shallow bowl and soak the tomato slices for 10 minutes.
  3. Prepare the coating: In another bowl, mix the flour, cornmeal, salt, pepper, garlic powder, and paprika.
  4. Beat the eggs: In a third bowl, beat the eggs.
  5. Coat the tomatoes: Dip each tomato slice first in the flour mixture, then in the eggs, and again in the flour mixture, pressing to coat well.
  6. Bake: Arrange the coated slices on the prepared baking sheet. Lightly drizzle or spray the tops with olive oil. Bake for 15-20 minutes, flipping halfway through, until golden brown and crispy. Serve hot.
