  • 1 pound ground chicken

  • 1 teaspoon sugar
  • 1/4 teaspoon chili flakes (adjust to taste)
  • 1/4 cup toasted rice powder (optional, for authentic texture)
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons chopped fresh mint
  • 2 green onions, sliced

Instructions

  1. Heat the oil: Warm 1 tablespoon vegetable oil in a large skillet over medium heat to prepare for cooking the ground chicken.
  2. Cook the chicken: Add 1 pound ground chicken to the skillet, breaking it up with a spoon. Cook until fully browned and no longer pink, about 5–7 minutes.
  3. Sauté aromatics: Stir in the minced garlic and finely chopped shallot, cooking for 1–2 minutes until fragrant and softened.
  4. Add seasonings: Mix in 1 tablespoon fish sauce, 1 tablespoon soy sauce, 1 tablespoon lime juice, 1 teaspoon sugar, and 1/4 teaspoon chili flakes. Let cook for another 2–3 minutes to allow flavors to meld.
  5. Incorporate fresh herbs and rice powder: Remove the pan from heat. Stir in 1/4 cup chopped fresh cilantro, 2 tablespoons chopped fresh mint, and 2 sliced green onions. Sprinkle in 1/4 cup toasted rice powder if using, to add authentic texture.
  6. Assemble wraps: Spoon the chicken mixture into fresh butter lettuce leaves. Serve immediately with extra lime wedges on the side for additional zest.

Notes

  • Toasted rice powder adds a traditional Thai texture and flavor but can be omitted if you don’t have it on hand.
