Description

Wet Ingredients:

  • 2 large eggs
  • 1 cup buttermilk (room temperature)
  • ½ cup vegetable oil
  • 2 teaspoons pure vanilla extract
  • 1 cup hot brewed coffee

Additional:

  • ½ cup semi-sweet chocolate chips (optional)
  • 1 ½ cups heavy cream
  • 8 oz dark chocolate (chopped)
  • 2 tablespoons unsalted butter
  • Fresh raspberries and edible rose petals for garnish (optional)

Instructions

  1. Preheat and Prepare: Preheat oven to 350°F (175°C) and grease/line two 8-inch round cake pans. Combine dry ingredients in a bowl.
  2. Mix Wet Ingredients: In a separate bowl, beat eggs, buttermilk, oil, and vanilla. Combine wet and dry mixtures, then add coffee.
  3. Bake: Divide batter between pans and bake for 30–35 minutes. Cool cakes on a wire rack.
  4. Make Ganache: Heat cream, pour over chocolate/butter, let sit, then stir until smooth.
  5. Assemble: Spread ganache on one cake layer, top with the second layer, and cover the entire cake with remaining ganache. Garnish with raspberries and rose petals.

Notes

  • You can substitute hot water for coffee, but coffee enhances the chocolate flavor.
  • For a stronger rose flavor, add ½ teaspoon of rose water to the ganache.
  • Cake layers can be made ahead and frozen for up to one month.
