- 600g / 1.2lb sausages, of choice
- 2 garlic cloves, minced
- 1 onion, halved and sliced
- 1 carrot, peeled and sliced on the diagonal
- 1 tbsp curry powder (or more to taste)
- 3 tbsp flour (any type, see Notes for gluten-free options)
- 2 cups (500ml) chicken stock/broth, low sodium
- 1 tsp sugar
- 0.5 tsp salt (plus more to taste)
- 0.5 tsp black pepper
- 1 cup frozen peas
Instructions
- Heat the oil: Heat 0.5 tbsp of oil in a large skillet over medium-high heat to prepare for cooking the sausages and aromatics.
- Cook sausages: Add the sausages to the skillet and cook, turning occasionally, until they are browned all over. Remove the sausages from the pan and set aside. Optionally, slice the sausages on a diagonal for serving.
- Sauté garlic and onion: In the same skillet, add the minced garlic and sliced onion. Cook for about 2 minutes, stirring occasionally, until the onion becomes translucent and fragrant.
- Add curry powder: Stir in 1 tablespoon of curry powder and cook for 30 seconds to release the spices’ aroma.
- Add flour: Sprinkle 3 tablespoons of flour into the skillet and mix for 30 seconds to form a roux, which will thicken the sauce.
- Incorporate chicken stock: Gradually pour in 2 cups (500ml) of low sodium chicken stock while stirring constantly to avoid lumps and create a smooth sauce.
- Add vegetables and seasonings: Stir in the sliced carrots, 1 teaspoon sugar, 0.5 teaspoon salt, and 0.5 teaspoon black pepper. Mix thoroughly to combine all ingredients.
- Simmer with sausages and peas: Return the sausages and add 1 cup of frozen peas to the skillet. Bring the mixture to a simmer and cook for about 3 minutes or until the sauce thickens to your desired consistency.
- Serve: Serve the curried sausages hot over mashed potatoes, rice, pasta, or noodles. For a low-carb option, mashed cauliflower works wonderfully.
