Description

A comforting and flavorful curried sausages recipe that combines savory sausages with a rich, spiced curry sauce made from garlic, onions, carrots, and peas. Perfect for a quick midweek dinner, this dish is versatile served over mashed potatoes, rice, pasta, or noodles.

Ingredients

Scale

Main Ingredients

  • 0.5 tbsp oil
  • 600g / 1.2lb sausages, of choice
  • 2 garlic cloves, minced
  • 1 onion, halved and sliced
  • 1 carrot, peeled and sliced on the diagonal
  • 1 tbsp curry powder (or more to taste)
  • 3 tbsp flour (any type, see Notes for gluten-free options)
  • 2 cups (500ml) chicken stock/broth, low sodium
  • 1 tsp sugar
  • 0.5 tsp salt (plus more to taste)
  • 0.5 tsp black pepper
  • 1 cup frozen peas

Instructions

  1. Heat the oil: Heat 0.5 tbsp of oil in a large skillet over medium-high heat to prepare for cooking the sausages and aromatics.
  2. Cook sausages: Add the sausages to the skillet and cook, turning occasionally, until they are browned all over. Remove the sausages from the pan and set aside. Optionally, slice the sausages on a diagonal for serving.
  3. Sauté garlic and onion: In the same skillet, add the minced garlic and sliced onion. Cook for about 2 minutes, stirring occasionally, until the onion becomes translucent and fragrant.
  4. Add curry powder: Stir in 1 tablespoon of curry powder and cook for 30 seconds to release the spices’ aroma.
  5. Add flour: Sprinkle 3 tablespoons of flour into the skillet and mix for 30 seconds to form a roux, which will thicken the sauce.
  6. Incorporate chicken stock: Gradually pour in 2 cups (500ml) of low sodium chicken stock while stirring constantly to avoid lumps and create a smooth sauce.
  7. Add vegetables and seasonings: Stir in the sliced carrots, 1 teaspoon sugar, 0.5 teaspoon salt, and 0.5 teaspoon black pepper. Mix thoroughly to combine all ingredients.
  8. Simmer with sausages and peas: Return the sausages and add 1 cup of frozen peas to the skillet. Bring the mixture to a simmer and cook for about 3 minutes or until the sauce thickens to your desired consistency.
  9. Serve: Serve the curried sausages hot over mashed potatoes, rice, pasta, or noodles. For a low-carb option, mashed cauliflower works wonderfully.

Notes

  • You can use any type of sausage according to your preference—pork, beef, chicken, or plant-based works well.
  • Adjust the curry powder quantity according to your spice tolerance and flavor preference.
  • For a gluten-free version, use gluten-free flour or cornstarch instead of regular flour.
  • Adding more vegetables like bell peppers or potatoes can increase the nutritional value and flavor variety.
  • Using low sodium chicken stock allows better control over the saltiness of the dish.
