Instructions
- Prepare the dough: In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Add the cold, cubed unsalted butter and use a pastry cutter or your fingers to blend the butter into the flour mixture until it resembles coarse crumbs. Gradually add 6 to 8 tablespoons of cold water, one tablespoon at a time, mixing gently until the dough just comes together. Avoid overworking to keep the crust flaky. Shape the dough into a disk, wrap in plastic, and chill in the refrigerator for at least 15 minutes.
- Roll out the dough: On a lightly floured surface, roll the chilled dough to about 1/8 inch thickness. Use a round cookie cutter or a glass about 4 inches in diameter to cut out circles for the pies. Gather and reroll scraps as needed to cut more circles.
- Fill and fold the pies: Spoon about 1 to 2 tablespoons of your chosen fruit filling in the center of each dough circle. Optionally, sprinkle a few drops of lemon juice over the fruit to balance sweetness. Fold each circle in half to create a semicircle and press the edges firmly to seal.
