Zucchini Fries

  • 3 medium zucchini
  • 1 cup all-purpose flour
  • 1 cup Parmesan cheese, grated
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 large eggs, beaten
  • 1 cup bread crumbs
  • Cooking spray, as needed


Instructions

  1. Preheat the oven: Preheat your oven to 425°F (220°C) and prepare a baking sheet by either lining it with parchment paper or spraying it generously with cooking spray to prevent sticking.
  2. Prepare the flour mixture: Place the all-purpose flour in a bowl and set it aside; this will be the first step in coating your zucchini fries.
  3. Cut the zucchini: Cut off the ends of each zucchini. Then cut each zucchini in half widthwise and slice each half into sticks approximately 3 inches long and about 1/2 inch wide, forming fry-sized pieces.
  4. Mix the seasoned coating: In a separate bowl, combine the grated Parmesan cheese, bread crumbs, garlic powder, Italian seasoning, salt, and pepper. Stir well until all the ingredients are evenly mixed.
  5. Bread the zucchini fries: Working in batches to avoid clumping, dredge each zucchini stick first in the flour to coat lightly. Then dip it into the beaten eggs ensuring it’s fully covered. Finally, dredge the zucchini in the Parmesan and breadcrumb mixture, pressing gently to ensure the coating sticks well.
