Chicken and Seasonings
- 2 tablespoons olive oil
- 4 boneless skinless chicken breasts
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
Sauce
- 1/2 cup pepperoncini peppers, sliced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tablespoon fresh parsley, chopped
Instructions
- Heat the oil: Heat two tablespoons of olive oil in a large skillet over medium-high heat to prepare for cooking the chicken.
- Season the chicken: While the oil heats, season the four boneless, skinless chicken breasts evenly on both sides with one teaspoon each of salt, black pepper, garlic powder, onion powder, and half a teaspoon of paprika.
- Cook the chicken: Add the seasoned chicken breasts to the hot skillet and cook for six to seven minutes per side until they are golden brown and fully cooked through.
- Set aside chicken: Remove the cooked chicken from the skillet and place it on a plate to rest.
- Sauté pepperoncini: In the same skillet, add half a cup of sliced pepperoncini peppers and cook for one to two minutes, stirring occasionally until softened.
- Add chicken broth: Pour half a cup of chicken broth into the skillet, stirring to loosen any browned bits from the bottom of the pan for added flavor.
- Simmer broth: Bring the broth to a simmer and allow it to cook for about three minutes to slightly reduce.
- Add cream: Lower the heat to medium-low and pour in half a cup of heavy cream, stirring to combine the ingredients smoothly.
- Incorporate cheese: Stir in half a cup of grated Parmesan cheese until it melts and the sauce thickens slightly.
- Return chicken to skillet: Place the cooked chicken breasts back into the skillet and spoon some sauce over the top.
- Simmer chicken in sauce: Let the chicken simmer in the creamy sauce for about five minutes to meld flavors and warm through.
- Finish with parsley: Remove the skillet from the heat and sprinkle the dish with one tablespoon of chopped fresh parsley for added color and freshness.
- Serve: Serve the creamy pepperoncini chicken hot, spooning additional sauce over the chicken as desired for a delicious meal.
