Ingredients
Scale
For the Pudding
- 1 tbsp unsalted butter (for greasing)
- 4 cups milk (full or reduced fat)
- 1/3 cup white sugar
- 2 tsp vanilla extract
- 3/4 cup medium grain white rice, uncooked
- 1/2 cup sultanas or raisins
- 3/4 tsp cinnamon
- 1/2 cup thickened/heavy cream (or a bit of butter)
Instructions
- Preheat the Oven: Set your oven to 180°C (350°F) to prepare for baking the rice pudding in a casserole dish.
- Grease Baking Dish: Use the unsalted butter to thoroughly grease a 10-cup or larger casserole dish to prevent sticking.
- Prepare Milk Mixture: In a saucepan over medium-high heat, combine milk, sugar, and vanilla extract. Heat until simmering and the surface becomes foamy, stirring to dissolve the sugar completely. Be careful not to boil the milk, as it can split.
- Combine Pudding Ingredients: Place the uncooked rice, sultanas, and cinnamon into the greased baking dish. Pour the hot milk mixture over the rice and stir briefly to combine evenly. Cover the dish with a lid or aluminum foil.
- Bake the Pudding: Bake in the oven for 1 hour. Stir the pudding every 20 minutes during baking to prevent the rice from sticking to the base and to ensure even cooking.
- Add Cream and Stir: After baking, remove the pudding from the oven and stir in the thickened/heavy cream. The pudding will seem watery right away but will thicken as it cools.
- Serve: Serve the rice pudding warm immediately. Optionally, enhance it with a scoop of vanilla ice cream for an indulgent dessert experience.
Notes
- Note 1: You can use either full-fat or reduced-fat milk depending on your preference for creaminess and richness.
- Note 2: Medium grain white rice is recommended for its ideal texture in rice pudding, as it absorbs liquids well and cooks to a creamy consistency.
- Note 3: Sultanas or raisins add natural sweetness and texture contrast; feel free to omit if desired.
