Ingredients
Scale
Main Ingredients
- 1 tablespoon unsalted butter (â…› stick)
- 1 shallot, minced
- 1 teaspoon kosher salt, divided
- ¼ teaspoon ground black pepper
- 1 clove garlic, minced
- 5 cups corn kernels (fresh or frozen)
- ½ cup heavy cream
- 1 cup whole milk
- 2 tablespoons all-purpose flour
- ¼ cup freshly grated Parmesan cheese
Garnish
- Chopped fresh parsley (optional)
- Chopped fresh chives (optional)
Instructions
- Prepare the base: Melt the unsalted butter in a large skillet over medium heat to create a flavorful cooking base.
- Sauté aromatics: Add the minced shallot, ½ teaspoon kosher salt, and ¼ teaspoon black pepper to the melted butter. Cook for 2 minutes until the shallots are softened and fragrant.
- Add corn and seasonings: Stir in the minced garlic, corn kernels, heavy cream, and the remaining ½ teaspoon salt. Cook for 2-3 minutes to combine flavors.
- Mix milk and flour: Whisk the whole milk and all-purpose flour together in a measuring cup until smooth, then slowly pour this mixture into the skillet with the corn mixture, stirring continuously to prevent lumps.
- Simmer and thicken: Cook the mixture for 15 minutes, stirring regularly, until it thickens to a creamy consistency. Adjust seasoning with additional salt and pepper if desired.
- Finish with cheese and herbs: Remove the skillet from heat and stir in the freshly grated Parmesan cheese. Garnish with chopped fresh parsley or chives if desired for a burst of color and flavor.
Notes
- Use fresh corn when in season for best flavor, but frozen corn works well too.
- If you prefer a thinner consistency, reduce the cooking time or add slightly more milk.
- This dish can be reheated gently on the stovetop; add a splash of milk to loosen if it thickens too much upon standing.
- For a dairy-free version, substitute heavy cream and milk with coconut cream and a plant-based milk, and omit Parmesan or use a vegan cheese alternative.
