Ingredients
Scale
Dry Ingredients
- 1 cup dried cranberries
- ½ cup shredded coconut (plus extra for rolling)
- 1 cup rolled oats
- 1 tablespoon chia seeds
Wet Ingredients
- ¼ cup nut butter (almond or cashew works best)
- 1 cup pitted dates
Instructions
- Blend Dates and Nut Butter: In a food processor, blend the pitted dates and nut butter until the mixture becomes sticky and smooth, forming the base for your energy balls.
- Add Remaining Ingredients: Add dried cranberries, rolled oats, shredded coconut, and chia seeds to the food processor. Pulse several times until all ingredients are well combined and the mixture forms a dough-like consistency.
- Form Balls: Scoop the mixture using a spoon or small cookie scoop and roll it into 1-inch balls with your hands, ensuring they are compact and hold together.
- Roll in Coconut: If desired, roll each energy ball in extra shredded coconut to coat the exterior, adding texture and extra flavor.
- Chill: Place the energy balls in the fridge for 30 minutes to firm up. Once chilled, store them in an airtight container to keep fresh for up to one week or in the freezer for longer storage.
Notes
- You can substitute almond or cashew nut butter with peanut butter if preferred.
- For a nut-free option, sunflower seed butter can be used.
- Ensure dates are soft for easier blending; soak them in warm water for 10 minutes if needed.
- These energy balls can be stored in the fridge for up to one week or frozen for up to three months.
- Roll in additional shredded coconut or chopped nuts for varied textures.
