Ingredients
Scale
Meat
- 1 pound breakfast sausage
- 8 slices of bacon
Cheeses & Dairy
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 10 large eggs
- 1 cup whole milk
Vegetables & Herbs
- 1/4 cup chives, chopped
- 1 package (30 oz) frozen shredded hash browns
Seasonings
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven and prepare dish: Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
- Cook sausage: In a large skillet over medium-high heat, cook the sausage until browned and crumbled. Drain off any excess fat and set the sausage aside.
- Cook bacon: Using the same skillet, cook the bacon until crispy. Remove it from the pan, allow to cool, then crumble. Set aside the bacon crumbles.
- Mix egg base: In a large bowl, whisk together the eggs, whole milk, garlic powder, onion powder, salt, and black pepper until the mixture is thoroughly combined and smooth.
- Layer hash browns: Spread the frozen shredded hash browns evenly in the prepared baking dish, creating a uniform base layer.
- Add meats: Evenly layer the cooked sausage and crumbled bacon over the hash browns.
- Add cheese: Sprinkle the shredded cheddar cheese and mozzarella cheese evenly over the sausage and bacon layers.
- Pour egg mixture: Carefully pour the seasoned egg and milk mixture over the entire casserole, ensuring it covers all ingredients.
- Add chives: Sprinkle the chopped fresh chives evenly across the top of the casserole for a mild onion flavor and color contrast.
- Bake covered: Cover the baking dish with aluminum foil and bake in the preheated oven for 40 minutes to allow the casserole to set and cook through gently.
- Bake uncovered: Remove the foil and continue baking for an additional 10 to 15 minutes, or until the top is golden brown and the casserole is fully set in the center.
- Rest and serve: Let the casserole cool for about 5 minutes after baking to firm up for easier slicing. Then cut into portions and serve warm.
Notes
- For a milder flavor, substitute turkey sausage and turkey bacon.
- Make sure to drain excess fat from sausage to avoid a greasy casserole.
- Use fresh chives for the best flavor, but green onions can be used as a substitute.
- This casserole can be made a day ahead and refrigerated before baking; just add extra baking time if baking straight from cold.
- Leftovers store well covered in the refrigerator for up to 3 days and can be reheated in the oven or microwave.
