Description

Cowboy Caviar is a vibrant, fresh, and flavorful no-cook salad featuring a colorful mix of black beans, black eyed peas, fresh vegetables, and a zesty tangy dressing. Perfect as a healthy appetizer or snack served chilled with tortilla chips.

Ingredients

Scale

Vegetables and Beans

  • 4 roma tomatoes, diced (seeds removed)
  • ½ cup diced red onion
  • 1 green bell pepper, diced (seeds removed)
  • 1 jalapeño pepper, diced (seeds and spine removed)
  • 2 cups frozen sweet corn (no need to thaw)
  • 15 ounces black beans (drained and rinsed, 1 can)
  • 15 ounces black eyed peas (drained and rinsed, 1 can)

Fresh Herbs

  • â…“ cup chopped fresh cilantro

Dressing

  • â…“ cup olive oil
  • 3 tablespoons lime juice (from 1½ limes)
  • 3 tablespoons red wine vinegar
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon chili powder
  • 1 teaspoon granulated sugar
  • ½ tablespoon honey

Instructions

  1. Combine Ingredients: In a large bowl, stir together the diced roma tomatoes, red onion, green bell pepper, jalapeño pepper, frozen sweet corn, black beans, black eyed peas, and chopped fresh cilantro until well mixed.
  2. Prepare Dressing: In a separate medium bowl, whisk together the olive oil, lime juice, red wine vinegar, sea salt, black pepper, garlic powder, chili powder, granulated sugar, and honey until the dressing is smooth and well combined.
  3. Toss Salad and Dressing: Pour the dressing over the combined salad ingredients and stir thoroughly to ensure everything is evenly coated with the flavorful dressing.
  4. Marinate: Place the cowboy caviar in the refrigerator and allow it to marinate for at least 1 hour. This resting time helps the flavors to meld and develop.
  5. Serve: Serve the cowboy caviar chilled, accompanied by tortilla chips for a refreshing and tasty snack or appetizer.

Notes

  • This dish is best served chilled after marinating for an hour to enhance flavors.
  • For less heat, remove all jalapeño seeds; for more spice, leave some seeds in.
  • Use fresh lime juice for the best tang and brightness.
  • Highly adaptable: you can add avocado or substitute black eyed peas with chickpeas if preferred.
  • Can be stored in an airtight container in the refrigerator for up to 3 days.
