Ingredients
Scale
Cookie Dough
- 1/2 cup unsalted butter (softened)
- 3/4 cup granulated sugar
- 1/4 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup sour cream
- 1 3/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
Streusel Topping
- 1/4 cup all-purpose flour
- 1/4 cup brown sugar
- 1/4 teaspoon cinnamon
- 2 tablespoons melted unsalted butter
Glaze
- 1/2 cup powdered sugar
- 1–2 tablespoons milk
- 1/4 teaspoon vanilla extract
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper to prepare for baking the cookies.
- Prepare Streusel Topping: In a small bowl, combine the flour, brown sugar, and cinnamon. Then add the melted butter and mix until the mixture becomes crumbly, setting aside the streusel topping.
- Cream Butter and Sugars: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Then add the egg, vanilla extract, and sour cream, mixing until well combined.
- Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and cinnamon. Gradually add this to the wet mixture and mix until just incorporated.
- Scoop and Assemble Cookies: Using a spoon or cookie scoop, drop the dough onto the prepared baking sheets, pressing each cookie slightly to flatten. Generously sprinkle the streusel topping over each cookie.
- Bake Cookies: Bake the cookies in the preheated oven for 10 to 12 minutes, or until edges are lightly golden. Remove from the oven and allow them to cool on the baking sheets.
- Prepare and Apply Glaze: In a small bowl, whisk together the powdered sugar, milk (start with 1 tablespoon and add more if needed for desired consistency), and vanilla extract until smooth. Drizzle the glaze over the cooled cookies before serving.
Notes
- Ensure the butter is softened to room temperature to achieve the creamiest texture when mixing.
- Do not overmix the dough after adding dry ingredients to keep cookies tender.
- You can adjust the thickness of the glaze by varying the amount of milk added.
- For a stronger coffee flavor, consider adding a teaspoon of instant coffee powder to the cookie dough.
- Store the cookies in an airtight container at room temperature for up to 3 days.
