Instructions

  1. Preheat and prepare the pan: Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper to prevent sticking.
  2. Mash bananas and add butter: In a large mixing bowl, mash the ripe bananas until smooth, then stir in the melted butter until well combined.
  3. Add sugar, egg, and vanilla: Mix in the granulated sugar, egg, and vanilla extract until the mixture is smooth and uniform.
  4. Add dry ingredients: Sprinkle the baking soda and salt over the batter, then gently fold in the all-purpose flour until just incorporated. Avoid overmixing to keep the bread tender.
  5. Prepare cinnamon swirl: In a small bowl, combine the light brown sugar and ground cinnamon thoroughly.
  6. Layer batter and cinnamon swirl: Pour half of the banana batter into the prepared loaf pan. Evenly sprinkle half of the cinnamon-sugar mixture over the batter. Add the remaining batter on top, then sprinkle the rest of the cinnamon-sugar mixture.
  7. Create the swirl: Use a knife to gently swirl the cinnamon sugar through the batter to create a marbled effect without fully mixing it in.
  8. Bake the bread: Place the pan in the oven and bake for 50 to 60 minutes. Check doneness by inserting a toothpick into the center; it should come out clean.
  9. Cool the loaf: Remove the bread from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely before slicing.
