Instructions
- Prep for frying: Pour 2–3 inches of vegetable oil into a deep cast iron skillet or heavy pot. Slowly heat over medium until it reaches 350–375°F. Line a plate with paper towels. Mix the cinnamon sugar in a shallow bowl by combining 1/4 cup sugar and 1 teaspoon cinnamon.
- Make batter: In a large bowl, whisk together flour, 3 tablespoons sugar, 1/2 teaspoon cinnamon, baking powder, and salt. Add milk, maple syrup, egg, and 1 tablespoon oil. Whisk everything until smooth and thick, ensuring no lumps remain in the batter.
- Prep apples: Peel, core, and slice 4 medium apples into ½-inch rings. Pat dry thoroughly with paper towels to remove excess moisture. If the batter struggles to adhere, lightly dust the apple slices with cornstarch before dipping.
- Fry: Working one at a time, dip each apple ring into the batter, making sure it is fully coated. Gently lower the coated apple into the hot oil. Fry each side for 1–2 minutes until the fritters are golden and puffy. Adjust heat as needed to maintain oil temperature.
- Finish: Remove the fritters from the oil and drain briefly on paper towels. Immediately toss the warm fritters in the cinnamon sugar mixture to coat evenly. Arrange on a plate and repeat with remaining apple rings until all are fried and coated.
