Instructions
- Prepare the Dry Ingredients: In a large mixing bowl, sift together the all-purpose flour, baking powder, and cocoa powder. This will ensure your cupcakes are light and evenly mixed.
- Mix the Wet Ingredients: In another bowl, whisk the eggs with granulated sugar until pale and fluffy. Add the vegetable oil, milk, and vanilla extract, mixing thoroughly to combine all wet ingredients smoothly.
- Combine Wet and Dry Ingredients: Gradually add the dry flour mixture to the wet ingredients, stirring gently until the batter is just combined. Avoid overmixing to keep the cupcakes tender.
- Fill Cupcake Liners: Preheat your oven to 350°F (175°C). Line a 12-cup cupcake pan with liners and fill each about two-thirds full with batter.
- Bake the Cupcakes: Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean. Remove from oven and allow cupcakes to cool completely on a wire rack.
- Prepare the Frosting: Using a hand mixer or stand mixer, beat the softened butter until creamy. Gradually add powdered sugar, mixing on low speed to avoid a sugar cloud.
