Description

Delicious no-bake Chocolate Coconut Balls that combine the sweetness of condensed milk and coconut with a rich chocolate coating. Perfect as a sweet treat or party snack, these bite-sized delights are easy to prepare and require no cooking.

Ingredients

Scale

For the Coconut Balls

  • 1 3/4 cups desiccated coconut
  • 1 3/4 cups powdered sugar
  • 1/2 cup sweetened condensed milk

For the Chocolate Coating

  • 2 cups dark or semi-sweet chocolate chips
  • 2 tablespoons shortening

Instructions

  1. Mix the Base: In a large bowl, combine the desiccated coconut, powdered sugar, and sweetened condensed milk. Stir thoroughly until the mixture is well blended and forms a sticky dough.
  2. Shape the Balls: Using your hands or a small scoop, shape the mixture into 1-inch diameter balls. Place each ball onto a pan lined with wax paper. Refrigerate the balls until they are firm enough to handle, approximately 30 minutes.
  3. Melt the Chocolate: Place the chocolate chips and shortening in a microwave-safe glass bowl. Microwave in short bursts of 20-30 seconds, stirring well between each, until the mixture is fully melted and smooth.
  4. Coat the Balls: Dip each chilled coconut ball into the melted chocolate, allowing any excess chocolate to drip off. Place the coated balls back onto the wax paper-lined pan. Let them stand at room temperature or refrigerate until the chocolate sets completely.
  5. Store: Keep the chocolate coconut balls refrigerated in an airtight container. They are best enjoyed chilled and can be stored for up to one week.

Notes

  • Use dark or semi-sweet chocolate chips for a balanced sweetness.
  • If shortening is not available, you may substitute with coconut oil for a subtle flavor variation.
  • Ensure the balls are firm before dipping to prevent them from breaking apart in the chocolate.
  • For a decorative touch, sprinkle some extra desiccated coconut or finely chopped nuts on top before the chocolate sets.
  • These treats do not require baking, making them quick and easy to prepare.
