Description

This Chicken Spaghetti Lo Mein is a quick and flavorful stir-fry combining tender chicken breast with crisp vegetables and perfectly cooked spaghetti tossed in a savory Asian-inspired sauce. Ready in just 25 minutes, it’s a delicious weeknight meal that brings the classic lo mein flavors to your pasta bowl.

Ingredients

Scale

Protein and Pasta

  • 8 oz spaghetti (or any pasta of your choice)
  • 1 lb chicken breast, thinly sliced

Vegetables

  • 1/2 onion, thinly sliced
  • 1 bell pepper, sliced
  • 1 cup snap peas, trimmed
  • 2 cloves garlic, minced
  • 1/4 cup green onions, chopped (for garnish)

Sauce and Seasonings

  • 1 tablespoon vegetable oil
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar
  • 1/2 teaspoon sesame oil
  • 1/4 teaspoon red pepper flakes (optional for heat)
  • Sesame seeds (optional for garnish)

Instructions

  1. Cook the spaghetti: Boil the spaghetti according to package instructions until al dente. Drain and set aside to use later in the recipe.
  2. Cook the chicken: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the thinly sliced chicken breast and sauté for 5-6 minutes until fully cooked and browned. Remove the chicken from the skillet and set aside.
  3. Sauté the vegetables: In the same skillet, add the sliced onion, bell pepper, and snap peas. Cook for 3-4 minutes until the vegetables are tender yet still crisp. Add the minced garlic and cook for an additional 1 minute until fragrant.
  4. Prepare the sauce: In a small bowl, whisk together low-sodium soy sauce, oyster sauce, hoisin sauce, rice vinegar, brown sugar, sesame oil, and red pepper flakes if using, creating a flavorful sauce blend.
  5. Toss pasta with vegetables and sauce: Return the cooked spaghetti to the skillet with the sautéed vegetables. Pour the prepared sauce over the pasta and toss thoroughly to coat evenly.
  6. Combine chicken and cook through: Add the cooked chicken back into the skillet. Stir everything together and continue cooking for 2-3 minutes, stirring occasionally, until the pasta is heated through and the sauce has thickened slightly.
  7. Serve and garnish: Plate the Chicken Spaghetti Lo Mein hot. Garnish with chopped green onions and optional sesame seeds for added texture and flavor.

Notes

  • You can substitute spaghetti with any pasta like linguine or fettuccine for a different texture.
  • Adjust the red pepper flakes to control the heat level to your preference.
  • For a vegetarian version, replace chicken with firm tofu and use vegetarian oyster sauce.
  • Using low-sodium soy sauce helps reduce the salt content significantly.
  • Make sure not to overcook the vegetables to maintain their crisp texture.
