These Chicken Caesar Crostini are a delightful appetizer that combines crispy baguette slices with savory bacon, rotisserie chicken, fresh romaine lettuce, and classic Caesar dressing, topped off with freshly grated parmesan cheese. - 12 baguette slices (about 1/2″ to 3/4″ thick)

- Romaine lettuce, torn into small pieces (to taste)
- Freshly grated parmesan cheese (to taste)

- Caesar salad dressing (to taste, homemade or bottled)
- Salt and pepper (to taste)
Instructions
- Prepare Caesar dressing: If using homemade Caesar dressing, prepare according to your preferred recipe. Otherwise, have your favorite bottled Caesar dressing ready for assembly.
- Cook bacon: Preheat a skillet over medium heat. Cut the bacon into small pieces using kitchen shears or a knife. Fry the bacon pieces until they are crispy and golden brown. Remove from heat and set aside on a paper towel to drain excess fat.
- Prepare baguette slices: While the bacon cooks, cut the baguette into even slices about 1/2 to 3/4 inch thick. Using a brush, coat both sides of each slice evenly with olive oil. Use about 1/4 cup olive oil initially and add more if needed.
- Bake crostini: Preheat oven to 350°F (175°C). Arrange the oil-brushed baguette slices in a single layer on a baking sheet. Bake for 10-15 minutes, flipping halfway through if desired, until the crostini are golden brown and crispy like croutons.
- Assemble crostini: Remove the crostini from the oven and allow them to cool for a couple of minutes. Once slightly cooled, top each slice with a layer of torn romaine lettuce, followed by cooked chicken, a drizzle of Caesar dressing, crispy bacon pieces, freshly grated parmesan cheese, and a sprinkle of salt and pepper to taste. Serve immediately for best texture.
