Instructions

  1. Sauté Onion and Garlic: Heat olive oil in a large skillet over medium heat. Add the diced onion and cook for 3 to 4 minutes until softened. Stir in the garlic and cook for another 30 seconds to release its aroma.
  2. Cook Ground Beef: Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon as it cooks. Drain any excess fat to keep the dish from being greasy.
  3. Add Rice and Liquids: Stir in the uncooked rice, beef broth, diced tomatoes with their juices, salt, black pepper, paprika, and dried oregano. Bring the mixture to a gentle boil, then reduce heat to low.
  4. Simmer Until Rice is Tender: Cover the skillet and let the mixture simmer for 18 to 20 minutes, or until the rice is tender and most of the liquid has been absorbed.
  5. Mix in Cheese and Sour Cream: Remove from heat and stir in 1 1/2 cups of shredded cheddar cheese and sour cream if using, incorporating them evenly for creamy texture.
  6. Prepare for Baking: Transfer the mixture to a greased 9×13 inch baking dish. Sprinkle the remaining 1/2 cup of shredded cheddar cheese evenly over the top.
