- 3 garlic cloves, minced
- 1/2 onion, finely chopped
- 75g / 2.5 oz ham or bacon, diced
Vegetables
- 1 1/2 cups frozen diced peas, carrots, corn (or other diced fresh vegetables of choice)
- 400g (4 cups) cauliflower rice, raw
- 2 green onions, finely sliced
Eggs
- 2 eggs, lightly whisked
Sauces & Seasonings
- 1 tbsp Mirin (or Chinese cooking wine, substitute dry sherry or cooking sake)
- 1 tbsp Oyster Sauce (substitute Hoisin sauce if needed)
- 1.5 tbsp soy sauce (light or all purpose)
- 1 tsp toasted sesame oil
Instructions
- Heat the Oil: Heat 1 tablespoon of oil in a large skillet over high heat to prepare for sautéing the aromatics and meat.
- Sauté Garlic and Onion: Add the minced garlic and finely chopped onion to the skillet and cook for 30 seconds until fragrant and slightly translucent.
- Cook Ham or Bacon: Add the diced ham or bacon, cooking for 1 minute to release its flavors and crisp slightly for added texture.
- Add Frozen Vegetables: Introduce the frozen peas, carrots, and corn mix to the skillet. Cook for 2 minutes until the carrots are almost cooked through.
- Cook Cauliflower Rice with Sauce: Add the raw cauliflower rice along with Mirin, Oyster sauce, soy sauce, and toasted sesame oil. Stir regularly, cooking for about 4 minutes until the sauce reduces and the cauliflower is tender-crisp but not mushy.
- Cook the Eggs: Push the cauliflower mixture to one side of the skillet. Add the remaining 1/2 tablespoon oil and let it heat briefly, then pour in the whisked eggs.
- Scramble the Eggs: Let the eggs sit for about 10 seconds, then slowly scramble them. When the eggs are almost cooked, mix them into the cauliflower rice thoroughly.
- Finish and Serve: Toss in the finely sliced green onions, mix well, and serve the cauliflower fried rice immediately while hot and flavorful.

- Use any firm diced vegetables you prefer if you want to customize your vegetable mix.
