Instructions
- Prepare the filling: Start out by mixing the chopped rotisserie chicken, black bean queso sour cream dip, 1/4 cup of the chopped tomato, and about 1/2 cup of chopped lettuce in a bowl until well combined.
- Assemble the wrap: Spread the chicken mixture evenly on the spinach tortilla. Roll up the tortilla tightly, then cut off the ends with a knife. Slice the rolled wrap into approximately 8 pieces.
- Create the caterpillar base: Place a large lettuce leaf on a plate. Arrange the sliced wrap pieces lined up to resemble a caterpillar. Take the cut off end pieces and use kitchen scissors to cut out a circle, placing it on one of the end slices to form the caterpillar’s head.
- Add facial features: Cut the remaining tomato into thin strips, then further cut these strips into small pieces to create the legs of the caterpillar. Arrange these at the bottom of the slices. Use a piece of tomato to form a mouth on the head slice.
- Finish with antennas and eyes: Cut antenna shapes from the leftover tortilla scraps and press them into the top of the head slice. Make the eyes using small pieces of chopped chicken, placing them appropriately to complete the caterpillar’s face.
