Ingredients
Scale
For the Patties
- 1 ½ pounds ground beef (80/20 blend)
- 1 small onion, finely grated
- 2 garlic cloves, minced
- 1 tablespoon Dijon mustard
- 1 tablespoon Worcestershire sauce
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 1 large egg
- â…“ cup breadcrumbs
For Cooking and Gravy
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 medium onion, thinly sliced
- 8 ounces cremini mushrooms, sliced
- 2 tablespoons all-purpose flour
- 2 cups beef broth
- 1 tablespoon tomato paste
- 1 tablespoon Worcestershire sauce (for gravy)
- 1 teaspoon fresh thyme leaves
- Chopped parsley (for garnish, optional)
Instructions
- Prepare the Patties: In a large bowl, combine the ground beef, finely grated onion, minced garlic, Dijon mustard, Worcestershire sauce, kosher salt, black pepper, egg, and breadcrumbs. Mix gently until just combined to avoid tough patties, then form the mixture into four oval-shaped patties.
- Brown the Patties: Heat olive oil in a large skillet over medium-high heat. Add the patties and cook for 4–5 minutes per side until they are brown on the outside and almost cooked through. Remove the patties from the skillet and set them aside.
- Sauté Onions and Mushrooms: Reduce the heat to medium, then add butter, sliced onions, and cremini mushrooms to the skillet. Sauté until softened and lightly browned, about 6–8 minutes, stirring occasionally to prevent burning.
- Make the Gravy: Sprinkle the flour into the skillet with the onions and mushrooms and cook for 1 minute to eliminate the raw flour taste. Slowly whisk in beef broth to prevent lumps, then add tomato paste, additional Worcestershire sauce, and fresh thyme. Bring the mixture to a simmer and cook until the gravy thickens slightly, about 5–7 minutes.
- Simmer Patties in Gravy: Return the patties to the skillet, spoon the mushroom gravy over them, and cover the pan. Let everything simmer together for 10 minutes until the patties are fully cooked and the flavors meld beautifully.
- Serve: Serve the Salisbury steak hot, garnished with chopped parsley if desired, alongside your favorite sides like mashed potatoes or buttered egg noodles.
