Description

This Baked Shrimp Scampi in Foil Packets recipe offers a quick and flavorful way to enjoy shrimp with garlic butter, white wine, and a hint of heat from red pepper flakes. Cooked in individual foil packets, the shrimp stays tender and juicy while soaking up all the vibrant flavors. Perfect for an easy weeknight dinner, this dish comes together in just 20 minutes and serves four.

Ingredients

Scale

Shrimp

  • 1 ¼ – 1 ½ lbs. shrimp (peeled, deveined, 20-count/pound)

Sauce

  • 6 Tbsp. butter (salted, melted)
  • 4 cloves garlic (finely minced)
  • 3 Tbsp. dry white wine (or chicken broth)
  • ½ tsp. salt (to taste)
  • ¼ tsp. red pepper flakes (to taste)
  • ¼ tsp. black pepper (to taste)

Finishing

  • 1 Tbsp. lemon juice (freshly squeezed)
  • Parsley (optional, for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 425 degrees Fahrenheit to ensure it reaches the right temperature for baking the shrimp packets evenly.
  2. Make the Sauce: In a small bowl, whisk together the melted butter, finely minced garlic, dry white wine (or chicken broth), salt, red pepper flakes, and black pepper. This flavorful mixture will coat the shrimp and infuse them with rich taste as they cook.
  3. Add Shrimp to Packets: Tear off four strips of aluminum foil about 10 inches long and place four slightly shorter strips of parchment paper on top of the foil. Arrange 6-8 shrimp on the center of each parchment paper piece. Pour one-quarter of the garlic butter mixture over the shrimp in each packet. Fold the longer edges of the foil and parchment together and twist to seal, leaving a small opening for ventilation. Then roll up the shorter sides to form secure foil packets.
  4. Bake in Oven: Place the foil packets on a baking sheet and bake in the preheated oven for 10-12 minutes, or until the shrimp are opaque and cooked through. The foil packets help steam the shrimp, keeping them juicy and tender while melding the flavors.
  5. Add Lemon and Serve: Carefully open each foil packet, avoiding the steam. Squeeze fresh lemon juice over the cooked shrimp and garnish with parsley if desired. Serve immediately and enjoy the delightful shrimp scampi!

Notes

  • Use dry white wine like Sauvignon Blanc or Pinot Grigio for best flavor; substitute with chicken broth if avoiding alcohol.
  • Adjust red pepper flakes according to your preferred spice level.
  • To easily peel and devein shrimp, buy prepped shrimp or do it yourself ahead of time to save time.
  • Serve with crusty bread or over pasta to make it a full meal.
  • Leftover shrimp scampi can be refrigerated for up to 2 days and gently reheated.
