Pesto Ingredients

  • 1 avocado
  • Juice of 1 lime
  • 1/2 cup pine nuts
  • 10 large basil leaves
  • 1 tablespoon chopped chives (or to taste)
  • 2-3 garlic cloves
  • Salt & pepper to taste
  • 1/3 cup olive oil

To Serve

  • Baguette or other bread
  • Red pepper flakes (optional)
  • Drizzle of olive oil (optional)


Instructions

  1. Prepare the Pesto: Add the avocado, lime juice, pine nuts, basil leaves, chopped chives, garlic cloves, salt, and pepper into a food processor. Blend on high speed while slowly drizzling in the olive oil to emulsify the mixture. Scrape down the sides with a spatula as needed to ensure even blending until you achieve a smooth and consistent texture.
  2. Serve: Use the avocado pesto immediately spread on fresh baguette slices or crackers. Optionally, sprinkle some red pepper flakes on top and drizzle additional olive oil for extra flavor. The pesto can also be chilled in the refrigerator for 30 minutes before serving to enhance the flavors.

Notes

  • For a nuttier flavor, lightly toast the pine nuts before using.
