Ingredients
Scale
Custard
- 6 egg yolks
- 3/4 cup granulated sugar
- 2/3 cup milk
Mascarpone Mixture
- 1 1/4 cups heavy cream
- 1/2 teaspoon pure vanilla extract
- 8 ounces mascarpone cheese
Soaking Liquid
- 1 cup strong brewed coffee, cooled to room temperature
- 1/4 cup coffee liqueur (optional)
Assembly
- 24 ladyfingers
- 2 tablespoons unsweetened cocoa powder
- Dark chocolate shavings (optional, for garnish)
Instructions
- Prepare the custard: In a medium saucepan, whisk together the egg yolks and sugar until well blended. Add the milk, and cook over medium heat, stirring constantly, until the mixture boils; boil gently for 1 minute. Remove from heat, cover, and allow to cool slightly. Refrigerate for about 1 hour to thicken and chill.
- Whip the cream: In a medium bowl, beat the heavy cream and vanilla extract until stiff peaks form. Set aside for later use.
- Prepare mascarpone mixture: In a large bowl, whisk the mascarpone cheese until smooth. Gently fold the whipped cream into the mascarpone until no streaks remain, creating a light and creamy filling.
- Mix soaking liquid: In a small bowl, combine the cooled strong brewed coffee and coffee liqueur (if using). Quickly dip each ladyfinger into the coffee mixture, ensuring they are moistened but not soaked.
- Assemble first layer: Arrange half of the dipped ladyfingers in the bottom of a 9″x13″ dish, creating an even layer.
- Add mascarpone layer: Spread half of the mascarpone mixture evenly over the layer of ladyfingers.
- Repeat layering: Add a second layer of dipped ladyfingers and top with the remaining mascarpone mixture, smoothing the surface.
- Chill the tiramisu: Cover the dish and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld and dessert to set.
- Finish and serve: Before serving, dust the top with unsweetened cocoa powder and garnish with dark chocolate shavings if desired for an elegant presentation.
Notes
- Use fresh, high-quality mascarpone for the best creamy texture and flavor.
- Do not soak ladyfingers too long to avoid a soggy dessert; a quick dip is sufficient.
- For a non-alcoholic version, omit the coffee liqueur and replace with additional coffee or a coffee-flavored syrup.
- Prepare tiramisu at least 4 hours ahead to allow the flavors to develop fully; overnight chilling is ideal.
- Eggs are gently cooked in the custard mixture to ensure safety, but if concerned, use pasteurized eggs.
