Description

These Armadillo Eggs are a delicious appetizer featuring spicy jalapeños filled with a creamy cheese mixture, wrapped in sausage, and coated in crispy breadcrumbs. A perfect combination of flavors and textures!

For the Armadillo Eggs:

  • 1 pound breakfast sausage
  • 6 large jalapeño peppers (halved and seeded)
  • 8 ounces cream cheese (softened)
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1½ cups panko breadcrumbs
  • 2 large eggs (beaten)
  • cooking spray or oil for baking


Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and prepare a baking sheet.
  2. Prepare the filling: Mix cream cheese, cheddar cheese, garlic powder, onion powder, smoked paprika, salt, and pepper in a bowl.
  3. Fill the jalapeños: Stuff each jalapeño half with the cheese mixture and press them back together.
  4. Wrap in sausage: Divide sausage into portions, wrap each jalapeño in sausage, dip in eggs, and coat with breadcrumbs.
  5. Bake: Place on baking sheet, spray with oil, and bake for 25–30 minutes until golden and cooked through.
  6. Serve: Let cool slightly before serving.

Notes

  • For a spicier version, leave some jalapeño seeds in.
  • You can air fry the Armadillo Eggs at 375°F for 15–20 minutes for a crispier texture.
